Pesto Caprese Pasta Salad
This dish is the ultimate no-settle gluten free dish – in fact, the substitution of an almond flour and meal mixture for traditional wheat products brings a complex, nutty flavor that elevates the dish.

- 1 (8 oz) pkg cherry tomatoes, halved
- Kalamata olives, halved
- 1 (8 oz) pkg Mozzarella pearls
- 1 jar Harvest Palm Fettucine, drained, rinsed, and cut into 1”-2” lengths
- 1/4 cup fresh chopped basil
- 1/4 cup pesto
- 3 Tbsp. olive oil
- 2 Tbsp. balsamic vinegar
- Salt and pepper, to taste
- Mix all ingredients together in a large bowl. Refrigerate until serving.
