Pesto Caprese Pasta Salad

This dish is the ultimate no-settle gluten free dish – in fact, the substitution of an almond flour and meal mixture for traditional wheat products brings a complex, nutty flavor that elevates the dish.

  • 1 (8 oz) pkg cherry tomatoes, halved
  • Kalamata olives, halved
  • 1 (8 oz) pkg Mozzarella pearls
  • 1 jar Harvest Palm Fettucine, drained, rinsed, and cut into 1”-2” lengths
  • 1/4 cup fresh chopped basil
  • 1/4 cup pesto
  • 3 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • Salt and pepper, to taste
  1. Mix all ingredients together in a large bowl. Refrigerate until serving.
